Cream Cheese Potatoes
  • 4 large potatoes cubed and cooked
  • 1 1/2 cups shredded cheddar cheese
    I use mozzarella or montery jack also or mix it up
  • 1 cup of sour cream

Stir in cheese and sour cream to cooked potatoes and blend gently.
Bake at 350 until cheese is melted.



Oven Stew
  • 1 lb of ground beef browned
  • 2 large potatoes diced or a variation I sometimes use is 1/4 cup of cooked rice
  • 1 or 2 medium onions
  • 1 cup sliced carrots
  • 2 cups of frozen mixed vegetables (I use mixed green and yellow beans add corn to it)
  • 1 can of cream of celery soup mixed with 2 cans of water add 1 packet of beef stock flavoring
  • 1 tsp of worchester sauce
  • 1 or 2 drops of tobasco sauce optional
  • 1/4 tsp of chili powder
  • 1/4 tsp of garlic powder
  • 1/4 tsp of ground black pepper

Mix thoroughly add to beef potatoes and vegetables
I lightly sprinkle the top of the stew with montreal steak spice.
Bake at 350 covered for 2 to 2 1/2 hours
Fits nicely in a 2 1/2 quart or 2.3 L casserole dish
Use left overs the next day in Yorkshire Stew



Yorkshire Stew
For the Stew
  • 2 large eggs
  • 1 cup of milk
  • 1 cup of flour
  • 1/2 tsp salt
  • 2 tbsp butter or margarine

Beat eggs in medium bowl until frothy
Stir in milk, blend well
Combine flour and salt in a small bowl.
Beat into the milk mixture until smooth
Place margarine or butter in and ungreased 2 quart ( 2L ) casserole dish.
Heat in oven a 400 F oven for 3 minutes or until melted.
Remove dish from the oven and immediately pour the batter in.
Using a slotted spoon place the stew in the center of the batter to within 1 inch of the edge.
Bake uncovered for 30 minutes at 400 F.



Taco Salad
Great for Parties and BBQ's
  • 1 lb ground beef cooked and drained, cooled
  • 1 Large head of romaine lettuce ripped into bite size peices use 2 heads for a large gathering
  • 1 large jar of salsa sauce, depending on taste i use mild for parties, medium or hot for at home.
  • 1 container of sour cream
  • 1 large bag of taco chips broken into smaller peices.
    hold back the taco chips until ready to serve salad as they go mushy.
    the salad is nicer when its crispy.
Optional
  • 1 onion chopped fine
  • 1 cup of mushrooms chopped
  • 1/4 cup of black or green olives i use green

Mix all ingredients thoroughly mix in taco chips when ready to serve
I have tried this recipe with taco sauce that you mix with water to make
tacos. It does not have a nice taste to it like the salsa sauce, but its a
different variation also.
