~Corn Balls~ submitted by: Natasa_007_247 ~
Indredients:
- 8oz Sour Cream
- 1/2 cup of melted/softened butter
- 1 (8.5oz) package of corn bread mix
- 1 (15oz) can of creamed corn
- 1 (15oz) can of whole kernel corn
- 1 package of grated Parmesan cheese
Directions:
- Preheat the oven to 350 degrees (175 C).
- In a bowl (I chose a glass, microwaveable bowl so I can melt the butter in it) mix: butter, sour cream, corn (both cans), and corn bread mix.
- Pour into a 1 quart casserole dish (8x8 pan works great) and bake for about 50 - 60 minutes (adjust for your oven and elevation).
- You will know the corn casserole is done when you stick a toothpick in the center and it comes out clean. For corn balls its ok to cook the casserole a little longer to make it dryer (it's easier to rill it into balls).
- Let the casserole cool down and then mix it up with a spoon.
- Take a spponful of casserole and shape it into a ball. Roll the ball or coat it with Parmesan cheese. Repeat this process until the entire casserole is done (size of balls is at your sicretion).
- Place the balls onto a non-stick baking sheet and broil on high for 5-10 minutes, until you see a crust forming on top.
- Take the balls out of the oven and let them cool a little before serving.
